Pork Chops and Potatoes with Thyme Submitted by TwoOtta3
Ingredients: 6
Pork Chops not
too thick
Cooking Instructions: Preheat the over to 400 degrees. Season the chops on both sides with s & p. Heat tablespoons of the butter and oil in a large frying pan over high heat. Add the chops and brown till golden on each side. Remove from heat and cover to keep warm. Peel and slice the potatoes
1/8" thick (I think the thinner, the better). Brush a 9 x 13"
gratin or baking dish (glass) with 1 Tbl. of butter. Spread a layer of
potatoes over the bottom and season with s&p. Place the chops on top
in a single layer and cover with more potatoes. Season with s&p and
sprinkle with thyme leaves. Melt the remaining 2 tablespoons butter and
drizzle over the potatoes. Bake until potatoes are tender, about 40 to 50
minutes. If the potatoes brown too quickly cover with foil Optional:
I like to put a layer of thinly sliced onion on top of the
first
layer of potatoes before the Chops are added.
Also
I’ll add the drippings from the frying pan to the dish,
to
add a little more flavor. |
