Marilyn's Homemade Pizza

PIZZA
DOUGH
1 Package Quick Rise Yeast - Fleishman's or Red Star
1 Cup Warm Water
1 tbsp. sugar
1 tsp. salt
2 tbsp. olive oil
2 1/2 to 3 cups All Purpose Flour
Dissolve yeast in warm water until frothy. Add sugar, salt and olive oil.
Mix.....Add flour by cup and mix until dough consistancy. Start with 2-1/2
cups first. You may not need all three cups. Knead like bread
dough....about 10 minutes. You can also put in Mixmaster and mix until
consistancy of dough.
Let rise in greased bowl until doubled. Around 1 hour. Punch down
and rise again. Spread with fingers outward in greased (with olive
oil) cookie sheet pan or pizza pan. Let rise again about 1/2 hour...
To assemble pizza.....
SAUCE - 1 small can tomato sauce or you can use 8 oz crushed
tomatoes
Oregano, garlic powder, pepper to taste
3/4 lb. grated mozzarella cheese more or less
depending on how much
cheese you like
Layer sauce over dough, then cheese....You can top with mushrooms, olives, etc.
whatever you want. Bake in 375 degree oven until bottom is cooked and
cheese is bubbly. Make sure pan is greased enough so bottom browns.
The darker the pan you use the better.
