Oven BBQ Beef Roast

1 Tbl. salt
1 Tbl. dry mustard
1 4-5 lb. chuck, or other inexpensive, roast
2 Tbl. vegetable oil
1-1/4 c. white vinegar
10-12 shakes of Tabasco bottle
1 Tbl. black pepper
1 Tbl. paprika
1/2 c. butter or margarine
1/4 c. Worcestershire sauce
1 tea. sugar

Preheat oven to 300 degrees.  Line a dutch oven or large roasting dish with heavy duty foil, making sure you have enough overhang to completely wrap around the roast and seal tightly while it cooks.

In a small bowl, combine the salt, pepper, mustard and paprika, mixing well.  Protecting your hands by covering them with Baggies, rub the mixture thoroughly and evenly into all sides of the roast.  Let the roast sit while you prepare the barbeque au jus.  Combine 1/4 c. of the butter, Worcestershire sauce, vinegar, sugar and Tobasco in pan, bring to a boil, reduce the heat and let simmer for 5 minutes.  In a large skillet, heat 1/4 c. of butter and oil until very hot.  Add roast and sear well on both sides.

Transfer roast to foil lined pan, then pour the au jus over the meat, closing the foil securely around the roast and seal well.  Bake for 4 hours.  Remove pan from oven, fold back foil and return to oven for one more hour.
