Mock Mashed Potatoes

1 small head cauliflower
2 big handfuls shredded cheese, your choice
1/4 c. sour cream
Shredded parmesan cheese (optional)

Cut core from cauliflower and steam until tender.  Drain and transfer to baking dish.  Mash cauliflower thoroughly until the texture of actual mashed potatoes.  Add shredded cheese.  Bake at 350 degrees for 5 minutes or until cheese is melty.  Remove from oven and let cool for a minute.  Add sour cream and parmesan.
