Approx. 30 shells
Shells - 6 eggs
1 1/4 cup milk
1 1/2 cup flour
1 tsp. salt
Beat eggs until fluffy. Add milk, then flour & salt. (Add flour and
salt slowly to avoid lumps). Make pan hot & brush with oil. I
use small Teflon frying pan. Put 1 to 2 tsp. batter and spread thin.
Do not brown. Turn to just cook the other side. (Like crepe shells).
Shells may be prepared before & refrigerated or frozen.
Ricotta Filling - 1 lbs. ricotta to each 1 recipe of manicotti
1 egg to each lb. of ricotta
1 tsp. romano cheese to each lb. of ricotta
Parsley, Salt, Pepper, Garlic Powder to taste
Mozzarella (1/2 lb. to each lb. of ricotta)
Mix all ingredients. Fill shell generously. Put some sauce (Red
Gravy) in bottom of pan and cover the manicotti with a layer of sauce.
Sprinkle with romano cheese. Cover with foil and bake 350 degrees for 1/2
hour or until bubbly and they expand.
