Bob's Italian Meatloaf

                                                      Ingredients:

 

1/1/2 lbs of ground sirloin
1/3 cup Italian seasoned bread crumbs
2 eggs
¼ cup onion
½ cup tomato juice
1/3 cup green pepper
Dash of Thyme, Marjoram, Garlic, Basil & Black Pepper
1 8 oz package of Sargento shredded Italian Cheese or Mozzarella

 

                                                      Instructions:

 

Put the  eggs, onion, tomato juice, and green pepper into a blender and blend well .

In a large bowl , put the ground sirloin, bread crumbs and seasonings. Mix together. Add liquid mixture and blend thoroughly with your hands.

Take meat mixture and flatten into a rectangle on top of a large piece of wax paper. Sprinkle package of cheese across meat. Roll up meat like a jelly roll. Pinch the ends to cheese doesn’t come up. Spray a loaf pan with olive oil spray . Put meat in loaf pan. Bake at 350 for 1 ½ hours or until brown.

       I like to put about 1 ½ cups of tomato sauce on the top for the last ½ hour.  That’s optional.
