Chicken & Dumplings/Pot Pie,  Mouse Style

3 boneless, skinless chicken breasts

chicken stock/broth (enough to cook breasts and to make gravy)

3 medium potatoes, peeled and cut into 1" cubes

4 to 5 stalks of celery, cut into 1" slices

3/4 bag baby carrots (16 oz. bag) cut into 1" slices
Bisquick

 

Preheat oven to 425 degrees.

 

Cook chicken in stock.  Cool then cut into 1" pieces. 

 

Cut and steam vegetables (vegetables can be steamed together or separately) until tender.

 

Make 3 to 4 cups of chicken gravy using packaged gravy mix or your own recipe.  Using stock instead of water will give you a richer tasting gravy.

 

Put vegetables and chicken in a 9 x 13" baking pan.  Pour gravy over mixture.

 

Using the recipe on the Bisquick box, make biscuit dough (2-1/4 c. Bisquick and 2/3 c. milk).  Using the spoon method, drop biscuits over top of chicken mixture.  Bake until biscuits are golden brown, approximately 20 to 25 minutes.  Remove from oven and let set for 5 minutes.  Serves 6 to 8 people.
