Creamed Chicken & Biscuits

(very quick, very easy, very good!)

 

1/2 lg. onion, chopped
1-1/2 tea. butter
4 cups chopped, cooked chicken
1 (10-3/4 oz.) can cream of chicken soup
1 c. sour cream
1/2 c. milk
1/2 c. chopped pimiento
1 c. shredded mild Cheddar cheese, divided
1 tube refrigerated biscuits

 

Preheat oven to 350 degrees.  Grease the bottom and sides of an 1  x 7 baking dish. 

 

Heat butter in a small nonstick skillet over medium-high heat until melted.  Stir in onion, sautee until tender.

 

Combine onion, chicken, soup, sour cream, milk and pimiento in a medium bowl and mix well.  Spoon mixture into prepared baking dish.  Bake for 15 minutes.  Remove from oven.

 

Sprinkle baked layer with 3/4 c. of the cheddar.  Arrange biscuits in single layer over top.  Sprinkle with remaining cheddar.

 

Bake until biscuits are golden brown and the sauce is bubbly, about 20 minutes longer (if you use Grands or other thick biscuits like I do, you'll want to bake it maybe 30 minutes, watch to make sure you're not burning it).  Serve immeadiately.
