Potato Cheese Casserole

This recipe does not have measurements, the amount of veggies you use depends on number of people you are feeding.
I use one large potato per person and usually add a couple of extra potatoes. One large sweet onion and one large green pepper.

Peel and dice potatoes into bite size pieces.  Chop up onion and green pepper into bite size pieces.  Place potatoes, onions, and green peppers in a 9 x 13 casserole pan, sprinkle with some salt and pepper to taste, if desired.  Melt a stick of margarine and pour over the vegetables.  Cover with foil, place 350 degree oven and bake 35 to 40 minutes or until the vegetables are tender.  Remove from oven and sprinkle with shredded cheddar cheese and bacon bits, cover and let set for a few minutes until cheese melts.
