Belizean Beans and Rice

Belizean Beans and Rice

2 c. (1-1/2 15-ounce cans) pinto beans, including liquid
1 small green pepper, diced
1 small yellow onion, diced
2 Tbl. chopped fresh cilantro
4 Tbl. butter
15-ounce can coconut milk
2 c. long-grain white rice, rinsed
salt and freshly ground black pepper to taste
1/8 tea. chili powder
1/8 tea. celery seed
1/8 tea. ground coriander
1/8 tea. nutmeg
1/8 tea. onion powder
1/8 tea. paprika
1/8 tea. garlic powder

Combine all ingredients in a large saucepan and bring to a boil over medium flame.  Cover, reduce heat to the lowest setting and simmer 30 minutes.  Fluff rice with a fork just before serving.
