Beef Mushroom Barley Soup Submitted by Starscr292
1 lb. beef stew meat, cut into 1" cubes 1 medium onion, chopped 1 Tbl. vegetable oil 6 c. beef broth 4 c. fresh mushrooms, sliced 1/2 c. barley salt and pepper to taste
Sautee mushrooms and onions in a little butter. In a large saucepan brown meet in oil for approximately 10 minutes. Stir in onions, mushrooms, broth and barley. Bring to boil, reduce heat and simmer covered for 1 hour.
